Love this article! I'm on a kick to add 10 grams of soluble fiber per day, since my cholesterol is around 250 total. Quaker High Fiber instant oatmeal is perfect (8 grams soluble, 10 grams total). It's too sweet for me by itself, so I add banana slices after I mix it up, which gives me another 2 or three grams :) It's a fast alternative to my yogurt smoothies.

I LOVE those FiberOne bars. I actually get the other ones that have that extra layer of chocolate on top. A tiny bit more expensive, but yumm-o!

Trader Joe's (not sure if this is in your area) carries a flax seed bread. They're thin and light, but awesome!

Frozen fruit is great for smoothies. Have you tried putting in some fresh spinach? I swear you can't taste it. And it just adds that much more natural goodies to your shake.

It really is hard to get started. But once you begin eating healthy, it really is habit forming. Eventually your cupboards and fridge becomes filled with mostly nutritious food, which will help in maintaining this way of life. And yes, I said 'mostly' because we are human and need to indulge every now and then.

What about soluble fiber like Metamucil, which you can add to recipes? Do you use this at all?

IMO, it is the easiest way to add a ton of fiber to your diet. Some may argue it is not the most effective way, which I would agree, but it's no different than some of the products you listed which add fiber after the fact as well.
